4 Ways with Healthy Puddings
INGREDIENTS
Chocolate Peanut Butter:
1/2 tsp. coconut oil
1 egg, whisked
1/2 ripe banana, mashed
2 tbsp. almond flour
1 heaped tbsp. cacao powder
1 tbsp. maple syrup
1/4 tsp. baking powder
1/2 tsp. coconut oil
1 heaped tsp. natural peanut butter (+ extra! If you want)
raspberries for decoration - opt
Chunky Monkey:
1/2 tsp. coconut oil
1 egg, whisked
1/2 ripe banana, mashed
2 tbsp. almond flour
1 tbsp. maple syrup
1/4 tsp. baking powder
1 tbsp. cacao nibs
1 tsp. chopped almonds
1 tsp. natural peanut butter (+ extra! If you want)
Sticky Date:
1/2 tsp. coconut oil
1 egg, whisked
1/2 ripe banana, mashed
2 tbsp. almond flour
1 tbsp. maple syrup
1/4 tsp. baking powder
2 Medjool dates, deseeded and roughly chopped
1 tbsp. natural almond butter
Apple and Strawberry Crumble:
1/2 pink lady apple, chopped into 1/2 cm cubes
3 small strawberries, finely chopped
1 tbsp. oats
1.5 tbsp. shredded coconut
1/2 tsp. ground cinnamon
1 tsp. maple syrup
1 tsp. coconut oil
METHOD
Preheat the oven to 160°C fan-forced
For the chocolate peanut butter
Grease an oven proof pie ramekin with 1/2 a tsp. of coconut oil
Whisk all ingredients together except the peanut butter and raspberries and pour into the greased ramekin.
Dollop a heaped tsp. of peanut butter in the middle of the pudding and bake for 10-12 minutes or until a skewer comes out slightly dirty (you still want it to be moist!)
Top with extra peanut butter, some raspberries and serve!
For the chunkey monkey
Grease an oven proof pie ramekin with 1/2 a tsp. of coconut oil
Whisk all ingredients together except the peanut butter
Pour into the greased ramekin and top with a heaped tsp. of peanut butter and bake for 10-12 minutes
Top with extra peanut butter and serve!
For the sticky date
Grease an oven proof pie ramekin with 1/2 a tsp. of coconut oil
Whisk all ingredients together except the almond butter and bake for 10-12 minutes
Top with a tbsp. of almond butter and serve!
For the apple and strawberry crumble
Toss the chopped apple and strawberries together and place them in the ramekin (don't worry about greasing it)
In a small bowl combine the remaining ingredients and rub together with your fingers
Cover the apple and strawberries with the crumble mixture, pressing down slightly
Bake for 10-12 minutes and serve!
