Banana Choc Pops

INGREDIENTS

Makes 6

6 medium bananas

200g dark chocolate, melted (see tip)

100g crushed peanuts

1/3 cup desiccated coconut

You will need 6 paddle pop sticks

METHOD

  1. Line a baking tray with baking paper and make sure there is some space in the freezer

  2. Peel the bananas and chop 1.5 - 2 cm off the ends, this makes it easier to thread the paddle pop stick through

  3. Carefully thread 1 paddle pop stick through the centre of each banana, place on baking tray and place in the freezer until needed

  4. Prepare an assembly line of a bowl of melted chocolate, a bowl of crushed peanuts and a bowl of desiccate coconut

  5. Take the banana pops out of the freezer, take one, dip it in the chocolate 3/4 covered then into the nuts or desiccated coconut and place back on the tray, repeat with the remaining bananas, rotating between crushed nuts and desiccated coconut

  6. Freeze for 3 hours or overnight

Tip - you may need to re-melt the chocolate, if it becomes too thick, it may break the banana

Keep in an airtight container in the freezer for 2 months
