Pomegranate Esme
An absolutely wonderful accompaniment with ANYTHING. Serve it on it’s own, with grilled bread, seafood (raw and cooked), lamb, on a bed of hummus or chickpea dip or over fresh cheeses.
INGREDIENTS
1 pomegranate, seeds removed
200g cherry tomatoes, finely chopped
2 small Lebanese cucumbers, finely chopped
1 medium red capsicum, deseeded and finely chopped
3 tbsp finely chopped flat leaf parsley
3 shallots, finely chopped
1 tsp ground cumin
½ tsp. fine sea salt
1 tbsp pomegranate molasses
2 tbsp. lemon juice
2 tbsp. EVOO
METHOD
1. Use your hands to toss all ingredients in a large bowl together. Mix until everything is well coated
2. Serve immediately
