INGREDIENTS

SERVES 2 PREP TIME 5 MINS

260 gm Chicken Breast, Cooked (shredded)

1 cup Microwave Brown Rice & Quinoa

2 cups Coleslaw Mix

1 cup Cherry Tomatoes (Quatered)

1 cup Frozen Corn (Cooked)

2 tbsp Mayonnaise

2 tsp Smoked Paprika

2 tbsp Lime Juice

2 tbsp coriander leaves (opt)

METHOD

  1. Toss left over chicken breast in 1 tsp paprika; sea salt and pepper to taste.

  2. In a small bowl, mix to combine mayonnaise with lime juice, remaining paprika; set aside.

  3. Heat grains according to packets intructions; divide rice, coleslaw, corn, cherry tomatoes and chicken between 2 bowls (or containers if meal prepping), drizzle with paprika mayonnaise and garnish with coriander if using. Enjoy!

Georgie’s Tips

Use left over chicken from a roast, grilled chicken thighs or breast or you can even by shredded chicken from delis at large chain supermarkets.
