Scrambled Egg Huevos Rancheros

This breakfast is my GO-TO the morning after a big night out. A hang over can get the better of all of us and can often have us reaching for not-so-nutritious foods. Instead, get in the kitchen and make this! With the help of two, this meal can be made in 15 minutes, tops! It's loaded with fibre, protein, good fats, and FLAVOUR. Much tastier than a greasy hamburger from a fast food joint.

You can be as creative as you want!

  • Add some more grated carrot, chopped cucumber, chopped capsicum

  • add some fresh mint leaves to your guacamole

  • switch the tortilla wraps for some spinach ones, quinoa, spelt

  • add a pinch of dried chilli flakes to your scrambled eggs

  • add some grated cheese to your scrambled eggs for extra protein and fat

Scrambled Egg Huevos Rancheros

Ingredients

Serves 2

2 whole grain tortilla wraps

4 large eggs, free range, lightly beaten 

2 handfuls thinly sliced purple cabbage OR purple sauerkraut 

Optional: 2-3 tbsp. cooked red or black beans (I used canned red kidney beans) 

For the guacamole:

1/2 large ripe avocado, peeled and roughly chopped

2 tbsp. red onion, finely chopped 

1 tbsp. coriander leaves, finely chopped 

1/2 long green chilli, seeds removed, finely sliced (keep the seeds in if you're feeling fiery!)

1 large lime, juice of 

Sea salt for seasoning 

For the tomato salsa:

8-10 cherry tomatoes, quartered 

1 tbsp. red onion, finely chopped

1 tbsp. coriander leaves, finely chopped

Method

  1. To make the guacamole, place all the ingredients in a bowl and use a fork to mash them together. Season with sea salt to taste

  2. To make the tomato salsa, toss the ingredients in a bowl and season with sea salt to taste

  3. Heat 1 tsp. of olive oil in a medium saucepan and softly scramble your eggs. I use a rubber spatula to gently fold the eggs until they are JUST cooked but still lushes and shiny. In my opinion, this dish really isn't as nice when the eggs are overcooked, however, if you prefer overcooked eggs, go for it!

  4. Warm your tortilla wraps in the oven for 2-3 minutes

  5. Divide the scrambled eggs between the two wraps, top with purple cabbage or sauerkraut, than add the guacamole, tomato salsa and finish with the red kidney beans

  6. Eat immediately or wrap them up in some baking paper to eat on the go! (should be eaten within the hour)
