Mango Coconut Bircher Muesli

INGREDIENTS

Serves 4

1 1/3 cups rolled oats

1/3 cup shredded coconut

1/2 cup + 2 tbsp. natural or Greek yoghurt

1 cup milk of choice

1 tsp. turmeric

1 tbsp. honey

2 medium mangoes (1 ripe)

2 passionfruit

Extra yoghurt and shredded coconut to serve

METHOD

  1. Peel the ripe mango, roughly chop it and place it in a food processor, blend until smooth

  2. In a small bowl combine half of the mango puree with the pulp of one passionfruit, cover and keep in the fridge until needed.

  3. In a medium bowl, add half the remaining mango puree, oats, shredded coconut, yoghurt, milk, turmeric and honey and stir until combined, cover and leave overnight or for 1 hour in the fridge

  4. Slice remaining mango into thin strips and remove pulp from remaining passionfruit

  5. Divide bircher between 4 bowls and serve topped with fresh mango, mango puree, passion fruit pulp, extra yoghurt and shredded coconut
