Very Berry Porridge

INGREDIENTS 

Serves 2

1 cup rolled oats

1 cup milk of your choice 

1/3 cup water 

1 ripe banana, mashed 

1 cup frozen berries (see notes)

Serve with extra frozen or fresh berries, kiwi, bee pollen (see notes), natural nut butter or any of your favourite porridge toppings.

METHOD

  1. Place all porridge ingredients (minus frozen berries) in a medium saucepan, bring to to the boil, then reduce to a medium heat, stirring contantly

  2. Add frozen berries and continue stirring until porridge thickens (about 7 minutes). I like to squish some of the berries to make the porridge a beautiful shade of purple!

  3. Divide between 2 bowls, top with porridge toppings and serve immediately

*You can use frozen blueberries, raspberries, blackberries or a combination of all 3

**Bee pollen is a pollen ball, which has been packed by worker honey bees into little edible pellets. It can be found in most health food stores.
