Loaded Veg and Quinoa Salad
Serves 4
INGREDIENTS
2 cups cooked quinoa
4 handfuls spinach leaves
1 bunch broccolini, trimmed, steamed
2 beetroots, cooked, roughly chopped (I left the skin on)
1 1/2 cups, sweet potato, cooked, roughly chopped (I left the skin on)
1 ripe avocado, peeled and sliced
6 tbsp. Greek yoghurt
1/2 lemon, juice of
2 tsp. harissa paste
1/2 tsp. sea salt
1 pinch pepper
4 tbsp. toasted walnuts, roughly chopped*
4 tsp. sunflower seeds*
METHOD
Place the Greek yoghurt in a small bowl, stir in the salt, pepper and lemon juice. Marbel through the harissa paste. Set aside
Spoon the quinoa evenly on a large platter or large wooden chopping board
Top with the steamed broccolini, spinach, beetroot, sweet potato, avocado, nuts and seeds
Finish by dolloping the harissa yoghurt over the salad and serve!
*feel free to swap walnuts and sunflower seeds with any type of nut or seed in this recipe
