Choc-Peanut Melting Moments
INGREDIENTS
Makes 16
1 cup 100% natural peanut butter
100g dark chocolate, melted
1/4 cup honey
1 cup + 2 tbsp. almond meal
1 tsp. baking powder
Pinch of pink himalayen salt
1-2 tbsp. milk of choice
50g dark chocolate, melted (optional)
2 tbsp. chopped almonds (optional)
2 tbsp. cacao nibs (optional)
METHOD
Preheat the oven to 160°C fan forced and line a large baking tray with baking paper
In a saucepan, melted the peanut butter, chocolate and honey together on a low heat, stiring constantly
Transfer to a heatproof bowl and stir in the almond meal, baking powder, salt and milk until combined
Roll tbsp. of the biscuit batter and place them on the lined baking tray, 3 cm apart
Press each biscuit with a fork and bake for 12-15 minutes, checking at 10 minutes
Take them out of the oven when they are firm, but slightly soft (they will harden slightly as they cool)
If using, drizzle biscuits with melted dark chocolate and sprinkle with chopped almonds and cacao nibs
Store in an airtight container for 1-2 weeks
