Banana Blender Pancakes
Serves 2
INGREDIENTS
Pancakes:
1 ripe banana, mashed
2 eggs
1 tsp. vanilla extract
1 cup oat flour (processed oats)
1 tbsp. chia seeds
3/4 tsp. baking powder
1 pinch salt
1-2 tsp. extra virgin olive oil
Toppings:
1 banana, sliced
2 handfuls raspberries
2 tbsp. pepita seeds
Maple syrup
METHOD
In a blender (liquidizer), place the mashed banana, eggs and vanilla extract and blend until combined
Add the remainder of the pancake ingredients besides the oil and blend until combined
Heat a large non-stick fry pan to a low-medium heat with 1 tsp. of olive oil and pour 2 small pancakes in. When bubbles appear, flip and cook on the other side for another minute or so
Repeat until there is no batter left (it makes about 6 small pancakes)
Top 3 pancakes with sliced banana, some raspberries, 1 tbsp. of pepita seeds and a drizzle of maple syrup and enjoy!
