Banana Blender Pancakes

Serves 2

INGREDIENTS

Pancakes:

1 ripe banana, mashed

2 eggs

1 tsp. vanilla extract

1 cup oat flour (processed oats)

1 tbsp. chia seeds

3/4 tsp. baking powder

1 pinch salt

1-2 tsp. extra virgin olive oil

 

Toppings:

1 banana, sliced

2 handfuls raspberries

2 tbsp. pepita seeds

Maple syrup

METHOD

  1. In a blender (liquidizer), place the mashed banana, eggs and vanilla extract and blend until combined

  2. Add the remainder of the pancake ingredients besides the oil and blend until combined

  3. Heat a large non-stick fry pan to a low-medium heat with 1 tsp. of olive oil and pour 2 small pancakes in. When bubbles appear, flip and cook on the other side for another minute or so

  4. Repeat until there is no batter left (it makes about 6 small pancakes)

  5. Top 3 pancakes with sliced banana, some raspberries, 1 tbsp. of pepita seeds and a drizzle of maple syrup and enjoy!
