Beetroot Bircher Muesli
INGREDIENTS
SERVES 2 PREP + REFRIGERATION TIME 1 HR 5 MINS
1 cup rolled oats
1.5 tbsp chia seeds
1/4 cup orange juice (about 1/2 juicy orange)
1/4 cup beetroot juice (see notes)
1 green apple, finely chopped into cubes (or grated)
3/4 cup Greek yoghurt
1-2 tsp honey (see notes)
TOPPINGS
3 figs, quatered
Extra orange, finely sliced
2 tbsp nuts and seeds
METHOD
Combine all bircher ingredients in a bowl and mix well to combine.
Set for 1 hr in refrigerator.
Serve between 2 bowls, topped with fruit, nuts and seeds and a dollop of extra yoghurt if you like.
GEORGIE’S NOTES
This can be stored in the refrigerator for up to 3 days.
I use the excess liquid from cooked, fresh beetroot in vacuum sealed 250g packs from the fresh section of supermarkets. Alternatively you can use 1/2 cup of orange juice instead of a combination of beetroot and orange juice.
Sweeten with honey to your personal preference.
Instead of figs and orange use whatever seasonal fruit you like.
