Toasted Muesli
INGREDIENTS
MAKES 750g (1/3 - 1/2 cup = 1 serve) PREP + COOK TIME 45 mins
4 cups (360g) plain rolled oats
1.5 cups mixed nuts (like almonds, walnuts, hazelnuts, macadamia, Brazil) You can buy mixed nuts.
1 cup coconut flakes (or shredded coconut)
1/4 teaspoon salt
1 tsp pure vanilla extract or vanilla bean pas
3 tbsp extra virgin olive oil
3 tbsp 100% maple syrup
METHOD
Preheat oven to160°C, fan forced and line 2 large baking trays with baking paper.
Mix together oats, nuts and coconut in a large bowl.
Whisk together olive oil, maple syrup, vanilla extract and salt and evenly pour over muesli mix, folding mixture until well coated.
Evenly distribute muesli on the prepared baking trays and toast for 30-40 minutes or until you desire, stirring halfway. (You'll need around 40 minutes for a rich golden brown like mine).
Remove from oven, allow to cool. Seal in an air-tight container. Keeps for 2 weeks.

Great yoghurt and with stewed plums or chia jam.
