PB&J Porridge
INGREDIENTS
SERVES 1 PREP + COOK TIME 15 mins
1/3 cup rolled oats
1 cup + 3 tbsp water (or milk)
1 medium banana, mashed (ripe is best)
3/4 cup frozen or fresh raspberries
1 heaped tsp peanut butter (100% nuts)
1 tsp slivered almonds (opt)
METHOD
Add the oats and water to a saucepan. Bring to the boil, then term down to a simmer, add mashed banana and cook, stirring for 7 minutes or until a loose porridge consistency.
To make the raspberry jam, simply microwave raspberries (if using frozen) for 30 seconds; mash with a fork until a jam consistency.
Transfer to a bowl, top with raspberry ‘jam’, heaped tsp of peanut butter and slivered almonds; serve immediately.
